There is no bad time for soup. Sure, the summer months are hot, but you can still squeeze in the occasional light and tasty soup. Even if you take the summer off, we have at least a solid seven months of soup season here in Minnesota. From brothy to creamy to chili(y?), there are soups for everyone. Here are some of my favorite soup recipes that incorporate different styles, flavors and ingredients.

Homemade Soup Ingredients
- Homemade or high-quality stock is a must! I keep plastic bag in my freezer and throw all my veggie scraps in there to save up to make homemade stock recipe.
- I also love broths from Taking Stock when I don’t have time to make my own.
How To Store Soup
I freeze my soups in Mason Jars. The pint jar is a 2 cup portion that is perfect for a single serving. The quart jars are 4 cup servings perfect for lunch or dinner with some fresh bread and a cheese course. The key to using Mason jars is to leave an inch and a half of space at the top.
I also love gifting soup! They make for great meal train meals, and are fun to give in little servings. You can even host a soup swap.

White beans and ham go together perfectly in a soup. If you have leftover ham from a holiday meal, be it Christmastime or Easter, this recipe is a great option. You can also get a ham hock from your favorite meat market to give your broth great flavor and pick the meat from.
Bacon, Potato Corn Chowder
This soup is one I make in the Summer with fresh corn but I also make it in the Winter with frozen corn that I bag in Ziploc 2 cups at a time from the last of the Fall Farmers Market corn. I love that it tastes so fresh even in February.
Beer Cheese Soup
Beer cheese soup is my jam. I have always loved super crumbly sharp cheddar cheese and beer; well, that goes without saying. I usually make this soup after the holidays. We typically end up with lots of cheeses milling about the refrigerator from various holiday gift baskets. Sometimes I vary the cheeses I use, but it’s essential to use enough sharp cheddar to get a decent flavor profile.
Slow-Cooker Beef Stew
If you’re like me, you could live off stews from the first 50-degree day until the snow finally melts in the spring. The homey warmth of a full meal in a bowl is not only delicious, but it’s also about as comforting as food gets. Beef stew is, of course, the go-to, and this recipe is a classic stew that is sure to delight. The bonus when it comes to stews is that you get to “set it and forget it,” because it is a slow-cooker recipe extraordinaire. If you are looking for a dinner that’s a little different but still comforting, this is a great option.
