This is a super easy salad to make. Plus, there’s no pineapple or marshmallows in it; this is not a riff on ambrosia salad! Instead, it’s a simple salad that lets the tangy and juicy freshness of cranberries and a few other delish ingredients really shine.

How to buy cranberries

Cranberries are ripe when they’re packaged and sold, but you still want to have a quick look at the bag and make sure they’re firm and dark red. If too many of the berries are soft and squishy or brown, then the bag isn’t fresh. If you can’t get good fresh cranberries, frozen cranberries may be available.

This easy cranberry salad is perfect for Thanksgiving and Christmas or anytime you want a deliciously different side dish!

  1. Coarsely chop the cranberries in a food processor. Use the pulse function so that you don’t grind them too finely. You want some larger chunks.
  2. Mix the cranberries and sugar in a bowl and chill it overnight.
  3. Toast the walnuts in the microwave for 2 minutes, or use the oven or a dry skillet. Chop them and set them aside.

Tips & substitutions

  • Red grapes and walnuts are traditional in my family, but green grapes and pecans could also be used.
  • Toast the walnuts for extra nutty flavor and crunch!
  • You can lessen the sugar in this recipe, but don’t eliminate it otherwise the cranberries will be too tart.
  • If you have extra cranberries, make this easy cranberry sauce!

I had this for the first time at a restaurant tonight and went looking for a recipe. I’m glad you use real whipped cream. I’d like to keep some of the berries whole though

    • Sandy

I wouldn’t keep the cranberries whole for this recipe. They really need to be ground! :)

I make this every Thanksgiving and Christmas. I always have to make extra for my oldest son and his family. Everyone LOVES THIS!

HI…. I really want to try this… Question – the note above the recipe says to freeze the ground cranberries and sugar, but the actual recipe below says to refrigerate over night. Which one is correct? I don’t know that it matters, but don’t want to assume… Thanks

    • Sandy

Hi, Lori. That section is for meal prep, if you want to do it in advance (just an option).

  4. MelissaReply

How far ahead of time can this salad be made? Is 2 days too long to stay in the fridge?

    • Sandy

I usually prepare all the ingredients, including the whipped cream. Then I assemble it right before serving!

My mom makes this every year, and it’s a hit. She uses Cool Whip (in reply to another comment/question) and also mixes in one chopped naval orange, including the peel. It’s a real treat!

    • Sandy

Sounds delish. Although I do not like Cool Whip. LOL

  6. LisaReply

I would eat this for dessert all year round. In Florida we cannot get fresh cranberries except during the holidays. Wondering if it is like this everywhere? I am going to try using frizen cranberries. Sure hope it works and is not mushy. Will re-post the results.

Is it possible to use crushed pretzels instead of nut? Would that possible serve as a substitute? Some members of my family are allergic to nuts, but pretzels might work….any advice?

    • Sandy

I would think the pretzels would get soggy. I have not tried this, but come back and let me know if it worked! :)

  14. PeggyReply

I cannot have dairy , so can cool whip work in this recipe? Also, have you tried less sugar? A cup and a half seems like too much for my taste , and the recipe looks so delicious,

    • Sandy

I have tried less sugar, and it works! I have not tried Cool Whip. I would think it would work, but you’d need to mix it all togehter right before serving. But again, I have not tried this. ENJOY!

  15. HeatherReply

Thank you, thank you thank you for sharing your family’s recipe. This is the one my grandmother and mom used every year for Christmas. We skipped out on it because we had 2 daughters and a niece and nephew who wouldn’t eat nuts. Now that they are grown I can have my favorite salad at Christmas again! I could not find my mom’s recipe and she passed away this year but thank you for loving old family recipes.

  16. PaulineReply

This salad is the best. I made it in a cooking class in the 90’s and I’ve made it every Thanksgiving since. I even had to make it once using a blender to grind the cranberries, and it was still delicious!

    • Sandy

That’s a great tip, although I’ve never tried the blender. SO YUMMY!

  17. HollyReply

Can you make it, freeze and then the day of let it defrost at room temp without changing the consistency?

    • Sandy

Hi, Holly. I personally would not freeze this salad. Although I have not tried it, whipped cream tends to weep when frozen (and already mixed in a salad) and also, the fruit would just be mushy! Sorry! (But if you try it, come back and tell us here!) :)

  18. JamiReply

My Grandmother made this every year too! She added marshmallows to hers though!

  19. Kirstin TroyerReply

oh man! I might just need to try this!!!!
