Green Curry Shrimp or Thai Green Curry is simply cooking jumbo shrimps (which can of course be replaced with chicken) in coconut oil with Thai Green Curry paste, Coconut Milk, Coconut Sugar, and of course some Fish sauce for that umami taste! Also try my Green Curry Chicken recipe

Serve this with Jasmine rice or Coconut rice or Thai Lemongrass Coconut Fried rice.

Why that Green Color?

Before I knew anything about this dish, I was curious to know what contributes to the green color in our Thai Green Curry paste?

After some research, I found out that it is basically the chilies that contribute to the green color. Thai Bird's eye chilies are both red and green. The green ones are less spicy while the red ones are spicier.

Thai Green Curry Recipe

Earlier I used to think Thai Cooking is complicated. But, the more Thai recipes I made, the more Thai Ingredients I used I began loving Thai recipes.

A few days back I made Peanut Shrimp Pad Thai and I loved the recipe. It turned out terrific. Then I tried Sticky Thai Meatballs with Peanut Sauce. And, I went crazy over it. That Peanut Sauce was rocking... So, I made Creamy Thai Peanut Chicken (with Peanut Butter), it was crazy delicious. Then I made Instant Pot Thai Cashew Chicken, Crispy Baked Thai Chicken Wings, Thai Sweet Chili Chicken.

🍲Ingredients

  • Jumbo Shrimps
  • Coconut Oil
  • Red Onions
  • Minced garlic
  • Kosher Salt
  • Thai Green Curry Paste
  • Coconut Milk
  • Coconut Sugar
  • Fish sauce
  • Lime Juice
  • Bird eye chilies, Thai Basil, and Fresh Kaffir Lime Leaves (OPTIONAL) for garnish

🧑‍🍳 Instructions

This recipe is pretty basic. This recipe has just one step. All you have to do is simply put everything in a pan. However, I will break it up for you so that you can understand the recipe easily.

Step 1: Saute Onions and garlic

In a sauté pan or cast-iron skillet heat coconut oil. Sauté onions and garlic over low heat until the onions turn soft but are not browned.

Step 2: Add Other Ingredients

Add Thai Green Curry Paste, Kosher salt, Coconut Milk, Coconut Sugar, Fish Sauce, and Lime Juice. Bring it to a quick boil and add shrimps.

Cook shrimps for 5-minutes until they are completely cooked.

Step 3: Garnish and Serve

Garnish with bird eye chilies, fresh Kaffir lime leaves, and Thai basil. Serve over rice.

📋Variations

  • Zucchini - You can cut thin slices of zucchini and add it to your green curry.
  • Chicken - You can skip shrimps and make the exact same recipe with chicken as well. I would go with chicken breasts cut into small 1-inch cubes. You can also use chicken thighs.
  • Bamboo Shoot - I skipped bamboo shoot because it was not available at the store. But, I missed it. If you can find bamboo shoot make sure you add it to your recipe. It'll add depth of taste to your curry. You cannot miss the sweet nuttiness of bamboo shoot in your thai green curry.
  • Palm Sugar - Coconut sugar is different from Palm Sugar. Many people confuse between the two. I am often confused between the two. Turns out both are different. Coconut sugar is made from Coconut Palm sap, whereas Palm Sugar is made from Palm tree. If you want you can use Palm sugar for this recipe.
  • Red Bell Pepper: To add more crunch to your dish add some thinly sliced red bell pepper to your Thai Green Curry.
  • Potatoes: You can add some chopped russet potatoes or new potatoes while making this curry.
  • Green Beans - You can add some trimmed fresh green beans to your green curry.
  • Ginger - While sautèing onions and garlic you can add some grated ginger to add a nutty tone to your green curry.
  • Galangal - Chopped Galangal is popularly used in Thai Cuisines. For more Authentic taste you can add chopped young Galangal.
  • Lemongrass - You can finely chop the bottoms of the stocks of lemongrass and it would add a brilliant taste to your Thai Green Curry.
  • White Peppercorns: White Peppercorn is common in Thai Cuisines. You can simply pound white peppercorns using a mortar pestle and then add it to your green curry.

📖 Substitutions

  • Coconut Sugar - You can substitute coconut sugar with brown sugar or caster sugar.
  • Chicken - Instead of shrimp you can use Chicken breasts cut into 1-inch cubes to make your Thai Green Curry.

🥗 Serving Suggestions

Ideally, this should be served with rice. But, if you are skipping rice due to carb concerns then you can serve this with iceberg lettuce or any salad such as:

Healthy Black Bean and Corn Salad with Lime Dressing or

Refreshing Pomegranate Orange Salad or

Feel-Good Apple Orange Salad With Walnuts and Mint Leaves or

Deli-style Creamy Classic Macaroni Salad or

Creamy Cucumber Red Onion Salad with Dill and Sourcream.

You can also serve your Green Curry with bread such as roti or paratha.

🥬 Can I make this with Kale?

Yes, in fact, Kale and Shrimp Thai Green Curry is one of my favorite recipes. It is super healthy and of course - super-delicious. Start the recipe as mentioned. Add kale along with Thai Green Curry. Cook until kale is wilted and then add the remaining ingredients.

🔥Is Thai Green Curry Spicy?

No, not at all. The reason being it is made with mildly spicy bird-eye chilies which are green in color. Therefore, Green Curry is not at all spicy. It has a fragrant and smoky flavor which makes it tastes really good. Coconut Milk, Coconut Sugar, and Coconut oil add a sweet tone to the recipe.

💪What Does Thai Green Curry Taste Like?

It has a very pungent and piquant taste because of so many spices. And when you cook with Green Curry you cannot skip Coconut sugar. Coconut sugar cuts the sharp taste of Green Curry and makes it mild.

Similarly, the use of Coconut Milk amplifies the creaminess of the curry and makes it so much more flavorful.

Ingredients

  • 1 lb Jumbo Shrimps peeled and deveined (you can either keep the tails or remove them)
  • 1 teaspoon coconut oil
  • 1 medium red onions peeled and thinly sliced (you can also use white onion or yellow onion)
  • 4 cloves garlic minced
  • Kosher Salt to taste
  • tablespoons Thai Green Curry Paste
  • 1 cup Coconut Milk
  • 1 teaspoon Coconut Sugar
  • 4-5 teaspoons fish sauce I love Red Boat Fish Sauce
  • 2 tablespoons lime juice optional
  • bird eye chilies slit (optional) for garnish
  • Thai Basil and Fresh Kaffir Lime Leaves for garnish (optional)

Instructions

  • In a sauté pan or Cast-Iron Skillet, heat some coconut oil over medium-high heat. Add onions, garlic. Sauté on low heat until the onions become soft but are not brown.

    Add Thai Green Curry Paste, Kosher Salt, Coconut Milk, Coconut Sugar, Fish Sauce, and Lime Juice. Stir well and bring it to a boil. If you want your curry to be liquidy then add more water. If you prefer more heat then spice it up with some red pepper flakes.

    As soon as the curry comes to a boil, add shrimps and cook for 5-minutes on medium heat until the shrimps are perfectly cooked.

    Serve with fresh kaffir lime leaves and Thai Basil over a bowl of rice.

Notes

  • cook shrimps first: If you want you can coat your shrimp with kosher salt and freshly ground black pepper. You can sear them in coconut oil until they are opaque white and light pink on the edges. Then prepare your curry and then just add your shrimps.
  • Coconut Oil:Use coconut oil for a nutty sweetness in your curry.
  • Spicy:For more heat add some chopped serrano pepper or jalapeños.
